We love this recipe for banana bread. Of course, you can also pop it into muffin tins and make muffins instead. If that’s the case, bake at 400 degrees for approximately 20 minutes. If making banana bread, bake at 375 degrees for about 50 minutes or until a knife inserted in the center of the loaf comes out clean.
Preheat oven to desired temperature.
Mix all dry ingredients together and set aside
1c quinoa flour
1/2 c wheat germ
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
Mix together :
1/3 cup melted coconut oil
1/2 c juice of an orange (I grate the rind and throw some in as well)
1/4 c coconut milk
Mix dry and wet ingredients together. Mash 4 over ripe bananas and mix in. Pour into a loaf pan. Add chocolate chips (if you’re not making it for a diabetic!) walnuts or raisins if desired. About 1/2 a cup should do it.
