I wish I’d taken a picture of this salad for you. Honestly, I had no idea it would be that good though!!
If you want to treat yourself to a quick, easy lunch, that the whole family will love, here’s what you need:
1/2 block of organic tofu, in small pieces
1/2 cup quinoa
1 cup greens, chopped
1/2 cucumber, chopped
1 stalk celery, chopped
1/2 red pepper, chopped
Lemon Garlic Salad dressing (I used Farm Boy brand this time – any organic brand will do)
Soak the quinoa for 2 hours. Drain and cook in vegetable stock according to directions
Cook the tofu in coconut oil with some of the lemon garlic dressing and some Bragg’s sauce. We like our tofu well done – kind of crunchy on the outside.
Chop your veggies and set aside. Once the quinoa is cooked, allow it to cool for a bit and then mix everything together with about 1/8 cup of the dressing.
SO Darned GOOD!!!!
